Vinification: Grapes are hand harvested // Whole bunch long gentle press cycle // Natural fermentation with indigenous yeasts // Fermentation and ageing in stainless steel for 18 months // 100% Malolactic fermentation // Light cold gross lees racking. No filtration, no fining. S02 total about 30 mg.
