Grown on limestone and clay soils at 250 meters above sea level, this Aligoté is flinty, mineral, and fresh with a beautiful roundedness from the 12- 18 months ageing in Burgundy oak barrels.

Match it with: 

An excellent accompaniment to slightly spicy or salty dishes, or even fatty foods, as flavours tend to be softened by the fresh acidity of the wine. Excellent with meat, fried foods, sausages, seafood and goat's milk cheeses.

Terroir: Orientation East and South-West. The soils are clay-limestone that date from the Kimmeridgian era. 

Vinification: Pressing in a pneumatic press following a long and gentle cycle // fermentation with indigenous yeasts // light static cold settling // fermentation and ageing for 12 to 18 months Burgundy oak barrels.
