A 100% Pinot Noir with concentrated yet delicate flavours of dark red fruits and spices. A slightly savoury note and a long, silky finish. Fresh and mineral but still complex. Decanting is recommended.

Emmanuel Giboulot comes from a long legacy of organic viticulture, and remains one of its greatest advocates in Burgundy today. He has four decades of experience in crafting the finest quality wines from a variety of terroir.

The east-facing Lulunne vineyards are located at the top of a slope of clay-limestone and silt soil in Beaune. The almost 100 year-old vines are adjacent to Pommard and climb up to the edge of a forest. The Lulunne name references of a stream whose source is located under the vineyard.

Vinification: From old vines planted at low density, growing on clay and limestone draining on gravel. Cultivated biodynamically since 1985, the grapes are picked by hand, 100% destemmed and fermented in open wooden vats for an average of 3 weeks. The press and free-run juice are blended and allowed to settle by gravity. Fermentation lasts a full lunar cycle. The extraction of aromas, tannins and colour is natural (no yeasts, enzymes or heat) and is done by traditional pumping over and punching down. The wine is then aged for 12 months in only old oak barrels.

Match it with: Pork belly, sweetbreads, roast beef, creamy cheeses.
