Age of the vines: 45-50 years

Vinification: Both red and white variants of the local grape variety Jaqué are co-planted & harvested together. The grapes are then destemmed and have one-night skin contact before pressing. Fermentation with indigenous yeast, then 8-10 months in tank before bottling
