Terroir: Sauvignon vines has been planted on calcareous, clay, muddy soil.
Age of vines: 50 years old vines of Sauvignon
Vinification: Grapes are hand picked. Fermentation starts with a temperature of 18 to 20 degres during 2/3 weeks. Wine cool downs at 15 degrees. Several racking to remove dead yeasts. Wine is aged on fine lees for 9 months. No fining, gentle filtration.
