From a limestone plateau with 18 months in old oak barrels. The minerality is well pronounced, but the oak ageing gives great roundness and texture.
This is a Chablis made for gastronomy. Winemaker Athénaïs de Béru is considered amongst the best in the appellation.

Vinification: Handpicked grapes in 12 kg crates // whole-bunch long gentle press cycle // aged in oak // fermentation with indigenous yeasts // 12 months ageing in oak barrels and 6 months in tank on fine lees // no filtration, no finning.
