Vinification: Grapes are hand harvested // Whole bunch long gentle press cycle // Natural fermentation with indigenous yeasts // 100% malolactic fermentation. Light cold gross lees racking // Vatting and alcoholic fermentation in oak // The wine is aged 12 months in old oak barrels and 1 year in a stainless steel tank // No filtration, no fining and no sulphites added.
