Terroir: "Hill of a priests", highest hill in Béru. Soil made of small eroded Kimmeridgian rocks. Small limestone scree eroded by the wind and rain that affect this exposed Vine plot.300m Altitude. Orientation Vine planted on an East-West facing dome. 

Average age of vines: 35 to 40 years old

Vinification: Grapes are hand harvested // Whole bunch long gentle press cycle // Natural fermentation with indigenous yeasts // 100% malolactic fermentation. Light cold gross lees racking // Vatting and alcoholic fermentation in oak // The wine is aged 12 months in old oak barrels and 1 year in a stainless steel tank // No filtration, no fining and no sulphites added.
