Description
Terroir: Only one plot called "La Caseta", located 205m above sea level with a strong maritime influence (Méditeranneen sea is 6 km far).
Age of the vines: 25 years old vines
Vinification: Grapes are hand-harvested early in the morning // Whole-bunches maceration in clay amphoras buried in the vineyard for 3 months // Fermentation started spontaneously with indigenous yeasts. In January, wine is removed from amphoras and stored in the winery // Bottling in May. 400 bottles produced.
