Description
Terroir: Quartz and sandstone schists.
Average age of vines: 40 years old
Vinification: Grapes are hand-harvested with a strict grape selection in the vineyard. Maceration-infusion in whole bunch for 4 to 5 weeks. Natural fermentation using native yeasts. The free run juice and pressed wine are blended together and then aged for a year in vats and one more year in barrels without racking to soften the wine. No filtration.
