This cuvée from Terre de L'Elu is a crystal wine of great aromatic purity. A subtle nose revealing fresh aromas and anise notes. The attack is silky and enveloping and stretches to iodine notes. A chenin with
almost a tannic structure, elegant and unusual, a great wine with food.
The name "Ephata" means "be opened" in Greek.
Match it with: a sea bream carpaccio with chermoula dressing (coriander, mint, lemon, olive oil, garlic, paprika). Typically good with fish, white meat or poultry cooked with lemon... or on exotic dishes.
Average age of vines: 70 years old. Yield < 20 hL/ha.
Vinification: Grapes are hand-harvested and gently pressed // Natural fermentation for 6 months in 10hL sandstone amphora // Aged for 1 year in 140L terracotta amphora ("ouillage"/ topping off every 2 month) and another 6 months in 10hL sandstone amphora // No sulphites.
