Vinification: Ludovic has sheeps in the vineyard; they graze from November to the end of March, which is excellent to boost the biodiversity in the soil
Grapes are hand-harvested and directly pressed. Natural fermentation with indigenous yeasts and no sulphur added. Ageing in stainless steel vats.
