Terroir: Clay-limestone soil
Age of the vines: 19 to 49 years old.
Vinification: Grapes are hand picked and sorted. The quick fermentation has been started in the wood vats which remains opened. The flavoring extraction and tannins are natural. Manual "pigeage" (punching of the cap) as well as "remontage" (pumping over) are performed.
