Terroir: Diversity of soils as the wine is a blend of different parcels: red clay, silt and pebbles which are based on sand. Others plots are made up of silts, clay and fine sand which are based on sedimentary yellow clay.
Age of the vines: 40 years old to one hundred years old.
Vinification: Grapes are hand harvested. Natural fermentation with indigenous yeast. wine is aged for 18 to 24 months depending on the vintage in concrete vats. The aim is to keep the flavour and the freshness of the fruit.
