A 100% Malbec with notes of ripe black fruit, blackcurrant, cassis and floral notes. Dense and rich with subtle tannins and hints of graphite on the finish.
Story: Matthieu Cosse and Catherine Maisonneuve are leading a renaissance of the Cahors region. They share a vision of refined, elegant wines with a distinct personality. This wine come entirely from a one hectare parcel of 35 year-old vines growing on soils of red clay and limestone. The Southern exposure means more sun, and riper fruit.
Vinification: Grapes are hand picked, table sorted and destemmed. The fermentation takes place in thermo-regulated vats using only indigenous yeasts and lasts 4 weeks. The wine is then aged for 16-24 months in oak barrels, 5% new. Unfined and Unfiltered.
Match it with: Roast pork with rosemary, sausages, charcuterie.
