Ludovic’s signature blend of Grenache Noir and Mourvèdre. The wine has a base of red fruit, but with notes of orange peel and spices. Smooth tannins and lots of acidity. The wine has softened over time and is in its optimal moment now.

 Ludovic Engelvin grew up in the Langeudoc, but is most heavily influenced by his time working alongside Didier Dagueneau and the wines of the world he tasted while working as a sommelier. Ludovic believes in growing only the right variety on the right terroir, and declines to use Syrah, instead focusing mainly on Grenache and Mourvèdre. For his signature wine, each year Ludovic changes the blend, and the label. The photo on the label of To Bring You my Flesh was taken by a friend of Ludovic’s at a slaughterhouse. The inspiration was Francis Bacon, and Ludovic wanted something to represent the troubling year he had experienced.

Vinification: Made from 50-60 year-old Grenache and Mourvèdre vines growing on sandstone soils. The grapes are harvested by hand, and vinification takes place in stainless steel tanks using only indigenous yeasts. Fermentation lasts one month in stainless steel tanks. The wine is then left to mature for 12 to 18 months in old Burgundian barrels and stainless steel. Bottled unfined and unfiltered with a small amount of Sulphur added for stability.

Match it with: Roasted red meats or with lamb with thyme or rosemary.
