This is a blanc de noirs made from 50% Meunier and 50% Pinot Noir which combines the density of pinot noir and the finesse and elegance of Meunier. Notes of honeysuckle, fresh fig, pear and baked plum. A pure and mineral Champagne with plenty of structure, freshness and balance. Nose of ripe baked plum. Tension on finish. A small amount of dosage is added. 

Story: Franck Pascal was one of the first biodynamic growers in Champagne and remains one of its most passionate and gifted winemakers. He meticulously cares for 7 hectares in the Vallée de La Marne with what he calls, “a deep sensitivity for nature and the energy forces in our vines.” Franck says the name comes from the desire to “capture harmony between grape and terroir– that harmony creates an energy flow. Usually the tannins and mineralogy come together like a fabric”

Vinification: 45 year-old vines growing on flint, millstone and hard limestone soils. Grapes are hand-harvested, gently pressed and placed in an enamelled vat for the first alcoholic fermentation. Indigenous yeasts only, and kept on its lees for 4 years. Unfined, unfiltered and zero dosage.

Match it with: Roast pork, grilled salmon, ripe cheeses.
