Age of Vines: 20-30 years
Vinification: Grapes are hand harvested in small baskets. Grapes are sorted by hand before undergoing a very light press. Alcoholic and malolactic fermentation starts naturally in tank with controlled temperature below 22' degrees. Wine is then aged for 7 years under a natural veil of yeasts at the surface of the wine with no topping up of the barrels. Without any sulphites, oxidation is hindered by the yeast cover. Bottled according to Maria Thun's lunar calendar, filtered, and no sulphites added.
