Vinification: Grapes are hand-harvested // Fermentation in wooden tanks for 2 weeks with alternating punch-downs and pump-overs // Ageing on its fine lees in demi-muids (600L barrels) for 12 months, then into stainless steel tanks for a few months // light filtration and bottling // Ageing in the bottle for 6 months before being released.
