Terroir: Limestone, red clay and sandstone
Vinification: Grapes are hand-harvested, destemmed and crushed by foot. Grenache is vinified separately. Carignan and Mourvedre are blended and fermented together. Controlled temperature during the fermentation at around 22 degrees. Must is tasted daily to decide on the length of the fermentation. Wine is aged in stainless steel tank without sulphites. No fining, no filtration, 2gr/l of sulphites added at bottling.
