Terroir: Clay and limestone soil with puddingstone, "Poudingue" in French
Average age of vines: 35 years old
Vinification: Grapes are hand-harvested around Mid November. They are looking for "Passerillage" in order to increase sugar concentration. Wine is aged in old barrel for 10/11 months and then bottled.
