Age of the vines: 20 years old vines

Vinification: Grapes are hand-harvested // Maceration on the skins for 48 hours // Alcoholic fermentation with temperature-controlled at 12.5 degrees Celsius during approx. 25 days // Second fermentation in the bottle // The wine stays on the lees for 6 years before being disgorged.
