The vineyard is located 300 meter above the sea level and around the castle. The vines are surrounded by a wall dating from the 12th century. Orientation South/South-West.

Vinification: Grapes are hand harvested // Whole bunch long gentle press cycle // Natural fermentation (with indigenous yeasts) // 100% Malolactic fermentation // Ageing for 30 months in "Foudres" (big wooden vats) and demi-muids // No filtration, no fining // Max 2g/L of sulphites added at the bottling.
