Terroir: "Ponca" consists of layers and blends of minerals from the prehistoric sea bed, clay and sandstone.

Vinification: Grapes are hand-harvested // The maceration of the skin with the juice lasts for 30/60 days in oak vats // The wine is then matured for 5 years in old oak barrels // The bottles are then aged before being released // Ageing in bottle will depend on the vintage but it's usually around 5 years // No added sulphur
