Vinification: Grapes are hand-picked // The first alcoholic fermentation takes place in an enamelled steel vat // Indigenous yeasts only // Pinot Meunier and Pinot Noir are fermented separately // Wines are blended together after fermentation // No fining // No filtration // No acidification // The second fermentation happens in bottle. Champagne is kept 11.5 years on yeast (sur latte).
