Age of the vines: 15 years old

Vinification: Grapes are hand-harvested and destemmed. Maceration takes place in a stainless steel tank, for 8 to 15 days. No added yeasts or sulphite.

Ageing on fine lees for 2 years in barrel. No fining. 2g of sulphite added at bottling
