Terroir: Orbois vines have been planted on silty sand stone soil over calcareous soil.
Age of vines: 25 years old
Vinification: Grapes are hand picked. They are gently pressed, and then the fermentation starts in barrels. Fermentation is then stopped by a cooling process, and the wine is bottled. The fermentation will finish in the bottle giving to this Petillant Naturel gentle and fine bubbles. The wine is still disgorged to removed sediments, but no “liqueur d’expedition” is added.
