Terroir: Chardonnay and Orbois vines has been planted on silty sand stone soil over calcareous soil.
Age of vines: 25 years old vines for Orbois & 50 years old vines of Chardonnay.
Vinification: Grapes are hand-picked. The temperature of the alcoholic fermentation is controlled at 11 degrees. The fermentation takes place in concrete vats. The second fermentation happens in the bottle. After a year on the lees, the wine is disgorged and a “liqueur d’expedition” is added to reach a balance between acidity and sugar.
