Terroir: Calcareous slit and red pelites containing high levels of iron on a limestone base.
Age of the vines: 30 years old
Vinification: Hand picked and sorted in the vineyard and cellar. Whole grapes immediately pressed. Fermented and aged on fine lees in two stainless steel vats during 6 months. The Grenache and the Cinsault vines are separately fermented.
