This cuvée is a rare blend of 80% Chardonnay and 20% Savagnin. The powerful nose is floral and mineral, giving way to ripe apple, pear and a touch of herbs and spices on the palate. The wine has intense energy and a firm structure. Despite the mouthwatering acidity, it feels round and fresh in the mouth, with a little prickle on back palate.

The Story: Maverick Muscadet producer Jérôme Bretaudeau of Domaine de Bellevue is devoted to the compelling terroir of Muscadet, but is known for forging his own path. Jérôme is a true lover of wine, and has set out to grow the grapes he likes to drink. Thankfully for us, he is a big fan of the wines of Jura, and has endeavoured to recreate some of those styles on his granite terroir. La Justice is his tribute to the Savagnin and Chardonnay blends so popular throughout the Jura. Chardonnay provides richness and body and Savagnin brings a pleasant nose and nuttiness. When combined they result in full, round wines that offer surprises on the palate. Jerome’s ability to produce these amazing wines from grapes atypical of the region confirms not only his talent, but also that is reputation as a rising star is well-deserved.

Vinification: Thirty-year-old vines are hand harvested, the grapes are de-stemmed and gently pressed. The juice is aged one year on the lees in concrete eggs and amphora.

Match it with: Fish pan-fried in butter, escargot, roast chicken with herbs or a cheese soufflé.
