Terroir: Schist with some quartz. 

Average age of vines: 40 years old

Vinification: Grapes are hand-harvested. The picking period can sometimes stretch over a period of a couple of months, to enable the bunches to be picked only when they are ripe. The wine is aged in 500L barrels for a year.
