Terroir: "Ponca" =layers and blends of minerals from the prehistoric sea bed, clay and sandstone.
Vinification: Natural fermentation. Maceration in oak vats for 8 to 14 days. Ageing in 25/35 hl casks for 18 months. Small sulphur addition before bottling. Bottle ageing for 2 months
