Terroir: Sandstone, clay-limestone soil and deep ground.

Age of the vines: 100-year-old vines of Carignan, 35-year-old vines of Mourvedre.

Vinification: Grapes are hand-harvested. Old barrels are filled by gravity. Fermentation and 12-month ageing in barrel. Bottled without the addition of sulphites. For the 2017 vintage, the ageing was in amphora.
