Average age of vines: between 35 and 40 years.
Vinification: Grapes are hand harvested. Natural fermentation with indigenous yeasts. Fermentation and ageing in stainless steel for 12 to 18 months. 100% Malolactic fermentation. No filtration, no fining. Max 2g/L of sulphites added at the bottling.
