This cuvée from Terre de L'Elu  is a crystal wine of great aromatic purity. A subtle nose revealing silky aromas and aniseed notes. A chenin with an almost tannic structure, elegant and unusual.

The name "Ephata" means "be opened" in Greek.

Match it with: A sea bream carpaccio with chermoula dressing (coriander, mint, lemon, olive oil, garlic, paprika). Typically good with fish, white meat or poultry cooked with lemon.

Average age of vines: 70 years old. Yield < 20 hL/ha. 

Vinification: Grapes are hand-harvested and gently pressed // Natural fermentation for 6 months in 10hL sandstone amphora // Aged for 1 year in 140L terracotta amphora ("ouillage"/ topping off every 2 month) and another 6 months in 10hL sandstone amphora // No sulphites.
