Age of the vines: over 60 years old
Vinification: grapes are handpicked, sorted and destemmed. Traditional vinification in concrete vats. Fermentation lasts between 28 to 32 days with regular punching down followed by a gentle pressing at low pressure. Ageing on fine lees for 12 months in old oak barrels. No fining.
