The name "Ephata" means "be opened" in Greek.
Average age of vines: 70 years old. Yield < 20 hL/ha.
Vinification: Grapes are hand-harvested and gently pressed. Natural fermentation for 6 months in 10hL sandstone amphora. Aged for 1 year in 140L terracotta amphora ("ouillage"/ topping off every 2 month) and another 6 months in 10hL sandstone amphora. No sulphites.
