A blanc de noirs 100% Pinot Meunier made using the ‘saignée’ method (bleeding off), which gives more colour and slightly savoury notes. Salmon pink colour with red fruit and pastries on the nose. The palate has a rich texture and hints of spice. A rosé champagne that is full of personality and a lively match for more intense foods.

Story: Delphine Boulard now heads the estate she co-founded in 2009 with her father Francis. The domaine’s three hectares of holdings spread around three of Champagne, each with differing soils but all farmed biodynamically. The grapes for this cuvée come from the oldest parcel in the domaine, with 80 year-old Menuier vines in the village of Cuchery in the Marne Valley. A week before the planned harvest, Delphine does a taste test of the grapes form various plots to determine which will be included in this cuvée.The percentage of Pinot Noir and Meunier can change with each vintage, (CHECK) but it is always made with the saignée method.

Vinification: Grapes up to 80 years-old grown on clay and limestone soils. Grapes are hand harvested and gently pressed then macerated for 10 to 18 hours to extract aromas and colours. Once the aromas of red fruits are extracted and well integrated , the juice is bled off and then vinified in old small oak barrels. Spontaneous alcoholic fermentation using only indigenous yeasts, followed by malolactic fermentation with stirring of the lees. Unfined. Dosage: 3 g/l. All activities in the cellar follow the lunar calendar.
