Terroir: "Ponca" = layers and blends of minerals from the prehistoric sea bed, clay and sandstone.

Vinification: Grapes are hand-harvested. The maceration of the skin with the juice lasts for 30/60 days in oak vats. The wine is then matured for 5 years in old oak barrels. The bottles are then aged before being released. Ageing in bottle will depend on the vintage but it's usually around 5 years. No added sulphur.
