A unique Chablis that expresses fruit aromas and a limestone minerality. “Terroir de Beru” is fresh and precise – a beautiful reflection of its terroir.

Terroir: Representative of the different vine plots of the domain; clay and limestone soils

Vinification: Hand-harvested // whole bunch // long gentle press cycle // natural fermentation with indigenous yeasts // fermentation and ageing in stainless steel for 18 months // 100% Malolactic fermentation // light cold gross lees racking // no filtration // no fining // S

Chablis "Côte Aux Prêtres" (White) 2022

Terroir: "Hill of priests", is the highest hill in Béru. The soil is made up of small limestone scree eroded by the wind and rain that affect this exposed Vine plot. 300m Altitude. Orientation East-West facing dome.

Average age of vines: 35 to 40 years old

Vinification: Grapes are hand-harvested // Whole bunch long gentle press cycle // Natural fermentation with indigenous yeasts // 100% malolactic fermentation // Light cold gross lees racking // Vatting and alcoholic fermentation in oak // Aged for 12 months in old oak barrels and 1 year in a stainless steel tank // No filtration, no fining // No sulphites added.

Chablis "Montserre" (White) 2022

Terroir: The parcel is located in the municipality of Chichée, Fleys and Béru, 400 meters above sea level. On a plateau at the top of a hill composed of "Serres" (extremely draining limestone geological formation). Lime and clay soil, with a base of lime mother rock under a very hard lime layered crust.

Average age of vines: Vine plot planted in the 80`s/90’s

Vinification: Handpicked grapes in 12 kg crates // Whole bunch long gentle press cycle // Runoff and alcoholic fermentation in oak // Fermentation with Indigenous yeasts // 12 months ageing in oak barrels and 6 months in tank on fine lees // No filtration, no finning.
