Terroir: Single vineyard called "La Caseta", located at 205m high with a strong maritime influence (Méditeranneen sea is at 6 km).
Age of the vines: 25 years old vines
Vinification: Grapes are hand-harvested early in the morning. Grapes are destemmed and put in clay amphoras buried in the middle of the vineyard. Fermentation started spontaneously with indigenous yeasts. Maceration on the skins for 3 months. In January the following year, the wine was taken from the vineyard and stored in the winery. Bottling is in May. Around 250 bottles produced.
