Vinification: Grapes are hand-harvested. 80 % destemmed, crushed and pressed. 20 % skin contact. Spontaneous fermentation by indigenous yeasts. Ageing 10 month on lees in stainless steel tanks. No clarified, no stabilized, no filtrated, no sulphites added
