Vinification: Grapes are hand-harvested. 80 % destemmed, crushed and pressed. 20 % skin contact. Spontaneous fermentation with indigenous yeasts. 10 months ageing on lees in stainless steel tanks. Not clarified, not filtrated, no added sulphites.
