Age of vines: 60 year old vines grown
Vinification: grapes are hand-picked and half destemmed. Fermentation (malolactic and alcoholic ) takes place in stainless steel vat, then the wine is aged for 20 months in French oak barrels (half new barrels and half old barrels). Before bottling no clarification, no filtration.
