Terroir : clay
Age of the vines: 60 years old.
Vinification: the harvest is hand-picked. The whole grape is destemmed. Maceration takes place in tank, for 8 to 15 days. No yeasts added or sulphur. The ageing is on fine lees for 1 or 1 year 1/2. Depends on wine. No filtered. For bottling, 2g sulphite is added.
