Terroir : clay-sandy soil
Age of the vines : 30 to 100 years old.
Vinification : Grapes are handpicked. Maceration for 4 to 5 days. Natural fermentation (with indigenous yeast) in stainless steel vat. Rose de Saignee (bleeding method) that involves “bleeding” off a portion of red wine juice after it’s been in contact with the skins and seeds. Bottling in January/February following the harvest. No sulphur added
