Terroir: Clay and sand
Average age of vines: 15 years old
Vinification: Grapes are hand harvested. Natural fermentation. Maceration of the skin for 3 weeks, and then the wine is aged for 12 months in old oak barrels.
The Label: Katina Paximou started her stage career in Greece in 1928 and was one of the founding members of the National Theatre of Greece in 1932. She left the country during the war and moved first to the UK and then to the US. After she left, she quickly lost her popularity in Greece. The Kydonitsa was a well known and popular grape but it has been forgotten in favour of other popular Greek grapes.
