Terroir: Granitic soil. Single vineyard called "Genoveva".
Age of the vines : 180 years old vines
Vinification: harvested by hand. Grapes are destemmed and pressed directly. Fermentation and ageing in old foudre of 2500 Liter for one year. No temperature control, no lees stirring.
