Terroir : clay-limestone soil.
Age of the vines : 19 to 49 years old.
Vinification : Grapes are hand picked and sorted. The quick fermentation has been started in the wood vats which remains opened. The flavouring extraction and tannins are natural. Manual pigeage (puching of the cap) as well as remontage (pumping over) are performed.
