Description

Terroir: Cote de Beaune is a tiny appellation of only 52 hectares, one of the smallest in Burgundy – a region already famous for its diverse and often very small parcels. Not to be confused with the much larger Cotes de Beaune Villages (with 3,222 hectares), the terroir is characterised by its gravelly clay-limestone soil and its old vines. The soil contains some very white limestone lava and traces of barium. Clay with a large internal surface resting on the limestone base

Vinification: The grapes are pressed and undergo a cold clarification over approximately 24 hours. The clarified must ferments in large and previously used old oak vats, to preserve its purity and minerality, and aged for 18 months on its lees.
