Terroir: clay and limestone
Age of the vines: 10 years old vines
Vinification: Grapes are hand picked. Maceration for 8 days. Natural fermentation with indigenous yeasts. Ageing for 11 months in barrels (90% of the wine aged in old barrels, 10% in new oak barrels). No fining, no filtration, 2g of sulphites added at bottling.
